not to get you down but the jungle val in a 5 gallon you will not be able to really appreciate it id go with maybe micro sword or dwarf sag. and small leafed stem plants that you cut to desired height. also draw out different scenarios and see what you like

It's hard to describe how to do an aquascape, what I would do is look online for inspiration, then improvise with the tanks.
