Any plant I know that is a good plant will grow out of that 2 gallon like crazy.  Wysteria is my personal favorite for easy and it grows like crazy.

Anubias barteri var. nana dont demand to much light and dont grow to big and are slow growing so could work in the foreground and you have to do pretty much stuff wrong to kill it

Most foreground plants are not low light plants seeing how they need the high light to penetrate all the way to the substrate.  If the jar is going to be in sunlight you might be able to get away with it.
