Hmmmm... what physical characteristics are you looking for (bushy, grass like, broad leafed, etc) Some easy to keep plants I know of are Amazon sword, vallisneria, and Egeria Densa.

Look at java fern. Rosefolia. Cambola. Corkscrew val good middle to fore ground and spreads really well. Would suggest a great book on amazon by Tankmaster, Plants book. Get a used copy as the £50 price is shocking. Got mine £1 on the more sellers part if you use amazon you know what i mean. Fantastic book anyway. Good luck.
