Good tips thanks Tony. I like the meat thermometer idea. I always use my hand but this would be more accurate.

I used to always use my hand as well but then my Mom (she's not 100% supportive of this hobby in the first place) surprised me by giving me her old meat thermometer and said to use this. It was big of her.
I also have been checking the temperatures with the thermometer and then my hand...it's quite amazing how far off from accurate I actually can be :/
