The tear drop and broad leaves for sure are ludwigia. The red one could be also but I'm not sure.

Forgot to watch the rest of the video before commenting :) I was against snails are first also. But now I don't mind them. If you happen to get the trumpet snails they can be really beneficial. They burrow in the substrate and help aerate it. I can't really think of any cons other than having to control the population. 

Your platys are probably nibbling on bits of algae growing on the plants. They seem to be the bigger fish in your tank so it would make sense that they would poop more too.
