they probably just need more time. cut off all the dead parts so the plant only sends the nutrients towards new growth. i got some hornwort weeks ago and even after its completely shed, the new growth is happening quite slowly. i know it can be a mess, but don't be too quick to throw them out!
i've had that problem, for me it was the water temp, i run my water pretty warm so some of my plants started melting, they starting doing better when i moved them to a different tank
Several of my crypts melted like lightning even though I used old water from my 210 gallon tank plus cycled filter I had running in my big tank for months before I dirted my 56. I think melting is normal for many plants...especially crypts. I think they'll melt if a fish farts by one! Lol Don't worry, things came back for me...slowly. I've just passed the 30 day mark and am seeing growth regularly. lots of plants are grown emersed (out of the water) for the trade so when placed in the aquarium, many will loose leaves or completely die back then return with their submerged growth which is often all together different than the emersed growth.
Make sure you've got the basics:
1) plenty of fertilizer through a new dirt substrate or aquarium plant fertilizer
2) temperature about 65-75. (80 is a bit high but ok)
3) plenty of light. You need 5000-7000K & 10-40 lumens p/sq/inch surface area (sunlight is best)
4) fish. (fish provide Co2 along with the Co2 from the atmosphere)
5) Don't bury the crowns or rhizomes.
6) time. Let your plants find their way in the new environment
